Favorites – Salad Greens & Fruit
You pick – Create your own unique salad!
- 6 cups greens (fresh leaf spinach and/or mixed greens)
- 6 tablespoons chopped green onion
- 2 cups fresh fruit (berries, pears, kiwi, apple, grapes, pineapple)
- 1 can (10 ounces) mandarin oranges, drained
- ½ cup dried fruit (cranberries, raisins, cherries)
- ½ cup crumbled or grated cheese (feta, gorgonzola, Monterey Jack)
- ½ cup toasted or glazed soynuts*
Layer greens large salad bowl or platter. Top with green onion, fresh fruit, oranges, dried fruit and cheese and soynuts. Serve with Vinaigrette. Serves 4 to 6
Favorite Vinaigrette
- ½ cup soybean oil (vegetable oil)
- 3 tablespoons balsamic vinegar
- 1 shallot, minced
- 1 teaspoon Dijon mustard
- ⅓ cup raspberry or strawberry jam
Place all dressing ingredients in blender container. Whirl to thoroughly combine.
Makes ¾ cup dressing. Pour over salad mixture
* Glazed or candied soynuts: combine ½ cup soynuts, 2 tablespoons sugar and 2 tablespoons water in skillet; heat over medium heat stirring as mixture caramelizes for about 5 minutes. Remove from heat to cool; break cooled mixture into pieces to top salad.
