Quick Soy Pinwheels
Quick Soy Pinwheels
  • 1 cup cooked mukimame
  • ½ cup sour cream
  • 4 ounces cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 Tablespoon lime juice
  • 1 Tablespoon seeded, diced jalapeno pepper
  • 1 Tablespoon chopped green onion
  • 8 flour tortillas

Combine all ingredients in food processor until smooth. Spread on one side of tortilla and roll up tightly. Slice into 1-inch pieces. Cover, and refrigerate until ready to serve.

Makes 72 pieces
