Pumpkin Impossible Pie
  • 1 cup vanilla soy milk
  • 2 eggs
  • 2 cups canned pumpkin
  • ¾ cup sugar
  • ½ cup soy-flour blend
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla

Place all ingredients in blender, and mix well. Pour into lightly greased 9-inch pie plate. Bake at 350 F for 50–55 minutes or until knife inserted near center comes out clean.

Makes 1 pie that serves 8
