Pumpkin Bars With Fluffy Frosting
- ½ cup margarine, softened
- ¾ cup packed brown sugar
- 1 cup soy-flour blend
- ¼ cup margarine, softened
- 1 cup packed brown sugar
- 1 egg
- ½ cup sweetened condensed milk
- 1 can (15 ounces) pumpkin
- 1½ cups soy-flour blend
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon salt

Cream ½ cup margarine and ¾ cup brown sugar; add egg and sweetened condensed milk; continue mixing until light and fluffy. Add 1 cup soy-flour blend and mix. Press dough into greased 13-by-9-by-2-inch pan. Bake at 350 F 10–12 minutes or until lightly browned.
Cream ¼ cup margarine and brown sugar. Add egg and sweetened condensed milk; mix until creamy. Add 1½ cups soy-flour blend, pumpkin pie spice and salt; blend well. Pour over baked crust. Bake 30–35 minutes until mixture is done when inserted knife is clean. Cool. Frost cooled bars with Fluffy Frosting.

Fluffy Frosting
- ½ cup light corn syrup
- 1 cup marshmallow crème
- 2 egg whites
- ½ teaspoon cream of tartar

Place corn syrup in microwave-safe small bowl. Microwave for 1–2 minutes or until boiling. Stir in marshmallow crème. Combine in medium bowl, egg whites and cream of tartar; beat on high until soft peaks form. Gradually beat in marshmallow mixture and continue beating until stiff peaks.
