Princess Cake-Mix Cookies
- 1 package (15.25 oz.) white, strawberry or multi-sprinkled cake mix
- ½ cup silken tofu, drained
- ¼ cup vegetable oil
- 1 egg
- Combine cake mix, tofu, vegetable oil and egg in mixing bowl.
- Blend until all ingredients are moistened.
- Drop batter by spoonful on greased cookie sheet.
- Bake at 350 F for 15–20 minutes or until lightly brown.

Makes 24 cookies
Frosting
- 2 cups powdered sugar
- 4 tablespoons margarine, softened
- 1–3 tablespoons vanilla soy milk
- Red or pink food coloring
- Colored sugar (optional)
- Combine powdered sugar and margarine in mixing bowl.
- Add vanilla soy milk for desired consistency.
- Add food coloring to make a pink frosting.
- Frost cooled cookies. Sprinkle with colored sugar if desired.

Note: Tops of cookies may be dipped in frosting, or young children can spread frosting on cookies with a plastic knife or spatula.
