Potato Bacon Salad

  • 1½ pounds red potato
  • ¼ cup soy sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon mustard
  • 1 cup cherry tomatoes, halved
  • ½ cup chopped green bell pepper
  • ½ cup chopped celery
  • ¼ cup cooked, crumbled bacon
  • ¼ cup chopped red onion
  • Salt
  • Pepper

Quarter potatoes, and cook in large saucepan with water until fork tender; drain and cool slightly. Place in large bowl and set aside. In separate small bowl, combine soy sour cream, mayonnaise and mustard. Add dressing mixture to warm potatoes and gently combine. Add bell pepper, celery, bacon and red onion. Season with salt and pepper as desired. Chill before serving. Serves 6
