Pizza Egg Bake
Pizza Egg Bake
  • 1 pound bulk Italian sausage
  • 4 cups shredded hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1 medium zucchini, ⅛-inch lengthwise slices
  • 1 can (8 ounces) pizza sauce
  • 4 eggs
  • ¾ cup soy milk
  • ¼ teaspoon salt
  • 1 cup Italian cheese
  • ¼ cup shredded Parmesan cheese

Brown sausage in large skillet and drain. In large bowl, mix hash browns and cheddar cheese. In greased 8-inch square baking dish, layer half of that mixture. Top with a layer of cooked sausage and zucchini slices. Spread pizza sauce over zucchini, and top with remaining hash-browns mixture. In medium bowl, blend eggs, soy milk and salt. Pour mixture evenly over hash browns. Cover with foil, and bake at 350 F for 60 minutes. Uncover, then sprinkle with Italian and Parmesan cheeses. Bake an additional 15 minutes until knife inserted in center comes out clean. Let stand 5 minutes before serving.
