Glazed Pork Chops

2 tablespoons soy sauce
2 tablespoons vegetable oil
2 tablespoons apple cider vinegar
2 tablespoons and 1 tablespoon brown sugar, div.
1 ½ teaspoons Dijon mustard
2 pork loin chops, bone-in
1 tablespoon chili powder
1 tablespoon brown sugar

In small saucepan combine soy sauce, vegetable oil, apple cider vinegar, 2 tablespoons brown sugar and mustard. Heat to boiling and then simmer for about 10 minute to reduce. Combine chili powder and 1 tablespoon brown sugar in small bowl. Rub each side of the pork chops with the rub. Grill chops over medium heat on charcoal grill for about 5 minutes; turn and brush with glaze on grilled side; cook an additional 5 minutes; turn and brush glaze on second grilled side. Use meat thermometer for desired end temperature. Glaze ingredients can be doubled for additional glaze for serving.
