Creamy Edamame Hummus
- 1 cup frozen, shelled edamame
- 1 cup frozen green peas
- ⅓ cup tahini
- 3 Tablespoons fresh lemon juice
- 2 garlic cloves, smashed
- 2 teaspoons bacon bits
- 2 teaspoons soy sour cream
- 1 teaspoon cumin
- 1 Tablespoon water
- ¼ teaspoon salt
- 4½ teaspoons olive oil

- 1 Tablespoon roasted, salted, crushed soy nuts

Cook frozen edamame and peas in microwave for 2–4 minutes or as directed on package. Combine all ingredients in food processor with chopping blade. Pulse, and scrape the sides until smooth. Place hummus into a flat bowl. Drizzle with additional olive oil and sprinkle with crushed soy nuts as desired. Serve with celery, crackers or carrot chips.
