Cinnamon Vanilla Bread

  • 2 cups soy-flour blend
  • 1¼ cups sugar, divided
  • 3 teaspoons baking powder
  • 3 teaspoons cinnamon, divided
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • ⅓ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 tablespoons margarine, melted

Combine soy-flour blend, 1 cup sugar, baking powder, 1½ teaspoons cinnamon and salt in large mixing bowl. Combine eggs, buttermilk, vegetable oil and vanilla in second mixing bowl. Add egg mixture to flour mixture and stir only until flour is combined. Pour half of the mixture into a greased 9-by-5-by-3-inch loaf pan. Combine ¼ cup sugar, 1½ teaspoons cinnamon and 3 tablespoons melted margarine. Drizzle half of cinnamon mixture over batter in loaf pan. Swirl with a knife. Top with remaining batter, then drizzle with remaining cinnamon–margarine mixture; swirl with knife. Bake at 350 F for 55–60 minutes or until a wooden pick inserted in center comes out clean. Cool for 10 minutes before removing from pan. Makes 1 loaf
