Caramel Squares

 

¾ cup margarine, melted
1 cup all-purpose flour
1/4 cup soy flour
1¼ cups oatmeal
¾ cup brown sugar
½ teaspoon baking soda
¼ teaspoon salt
24 caramels
¼ cup soy milk
1 cup chocolate chips 

Combine melted margarine
with flours, oatmeal, brown sugar, baking soda and salt; set aside 1 cup
mixture.  Press remaining mixture into greased 8-inch square baking dish or
pan.  Bake for 10 minutes at 350 degrees.  In the meantime, heat soy milk and
caramels over low heat until smooth.   Remove baked mixture from oven and
sprinkle with chocolate chips then pour over caramel mixture.  Sprinkle with
reserved cookie dough and return to oven for 10 to 12 minutes or until done. 
Makes about 2 dozen bar cookies.
