Caramel Apple Bread

1 ½ cups soy flour blend
½ cup brown sugar
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon salt
¾ cup grated cooking apple
¼ cup buttermilk
¼ cup vegetable oil
2 eggs

In large bowl combine soy flour blend, brown sugar, baking soda, cinnamon and salt.  In medium mixing bowl combine grated apple, buttermilk, vegetable oil and eggs.  Pour liquid mixture into dry mixture and stir just until blended.  Pour mixture into greased 8×4-inch loaf pan.  Bake at 350 degrees for 35 to 40 minutes or until wooded pick inserted in center comes out clean.  Cool 10 minutes then remove from pan.  Drizzle with caramel glaze.  Makes one loaf.
