Candy Cane Pie

  • 1½ cups finely crushed chocolate graham crackers
  • 6 tablespoons margarine, melted
  • ½ cup semi-sweet chocolate chips
  • ⅓ cup chocolate soy milk
  • 1 package (8 oz.) soy cream cheese, softened
  • 1 cup powdered sugar
  • ¼ teaspoon peppermint extract
  • ⅓ cup crushed candy canes
  • 1 cup whipped topping

Combine chocolate graham cracker crumbs and melted margarine. Press into 9-inch pie plate. Melt chocolate chips and soy chocolate milk over low heat, stirring until smooth. Pour mixture over crust. Place in refrigerator while preparing filling.

Combine soy cream cheese, powdered sugar and peppermint extract; mix until smooth. Add crushed peppermint candies. Gently stir in whipped topping. Place filling in prepared pie crust; chill. To serve: Cut into serving pieces, and top each serving with additional crushed candy canes and chocolate star.

Chocolate Stars

  • ½ cup semi-sweet chocolate chips
  • 1 tablespoon shortening

Melt chocolate chips and shortening in saucepan. Pour melted chocolate into small plastic bag. Snip off small corner of plastic bag, and pipe chocolate star onto waxed paper. Let stand until hardened.
