Berry Cobbler

Ingredients:

  • 2 cups blackberries
  • 2 cups blueberries
  • 2 cups raspberries
  • 1/2 cup granulated sugar
  • 1/4 cup soy flour blend (for fruit)
  • 1 1/2 cups soy flour blend (for dough)
  • 3 Tbsp. granulated sugar (for dough)
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 6 Tbsp. margarine
  • 2/3 cup soymilk
  • 1 egg, beaten
  • 1 tsp. granulated sugar (for topping)

Directions:

  1. Place blackberries, blueberries and raspberries in a large mixing bowl
  2. Combine 1/2 cup sugar and 1/4 cup soy flour blend in a small bowl; add to fruit mixture and lightly coat fruit
  3. Place coated fruit in greased 8 x 8-inch square baking dish
  4. In a large bowl, combine 1 1/2 cups soy flour blend, 3 Tbsp. sugar, baking powder and 1/4 tsp. salt
  5. Cut in margarine until blended
  6. Add 2/3 cup soymilk and blend until mixture forms a soft dough
  7. Place dough between two pieces of parchment paper and roll out to fit top of fruit in baking dish
  8. Place dough on top of fruit and brush with beaten egg and sprinkle with 1 tsp. sugar
  9. Bake at 350 F for 35 to 40 minutes or until golden brown
