Summer Garden Paella
  • 1 cup brown rice (uncooked)
  • 2½ cups water
  • ¼ cup chopped onion
  • 2½ cups frozen mixed vegetables
  • 1½ teaspoons tumeric
  • 1 teaspoon onion powder
  • 1½ teaspoons cayenne pepper
  • 2 teaspoons garlic powder
  • ½ teaspoon ginger
  • 1 Tablespoon soy sauce
  • 2 Tablespoons tahini
  • 1 cup chicken, cooked and chopped
  • ½ cup dry-roasted edamame
  • Greek yogurt

Place rice in a medium pot with boiling water, and cook on high for 8 minutes. Reduce heat to medium, and add onion, mixed vegetables, spices, soy sauce, tahini and chicken. Stir thoroughly. Reduce heat to low, cover with lid, and cook for 10 minutes. Remove from heat, and add dry-roasted edamame. Serve with a dollop of Greek yogurt.
