Soy Delicious Snack Bars
Soy Delicious Snack Bars
  • 3 cups rice crisp cereal
  • ½ cup dried blueberries
  • ½ cup dried strawberries
  • ½ cup dried cranberries
  • ½ cup sliced almonds
  • ¼ cup flaked coconut
  • ½ cup honey
  • ½ cup creamy soynut butter
  • 1 teaspoon vanilla
  • ¼ cup strawberry soy yogurt
  • 2 cups powdered sugar

Chop dried fruit and almonds into desired size. Combine cereal, blueberries, strawberries, cranberries, almonds and coconut in large mixing bowl.

In small saucepan, heat honey, soynut butter and vanilla over low heat until melted. Pour over cereal mixture, and stir until mixed. Line a 9-by-9-inch pan (8-by-8-inch pan for thicker bars) with parchment paper for ease of removal. Press bar mixture into pan. Cover with another sheet of parchment paper, and press firmly.

Mix soy yogurt with powdered sugar, and spread over bars in pan. Allow the bars to set up in the refrigerator or overnight. Cut and enjoy.
