Savory Tomato & Green Chilies Bread
  • 1½ cups soy-flour blend
  • 2½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup sharp cheddar cheese, grated
  • 1 egg
  • 1 cup diced tomato and green chilies
  • ¼ cup soy milk
  • 2 Tablespoons vegetable oil

Combine soy-flour blend, baking powder and salt in mixing bowl. Add cheese. Make well in center of dry ingredients and add egg, tomatoes, soy milk and vegetable oil. Mix until all ingredients are just blended. Put mixture into greased 8-by-4-by-3-inch loaf pan. Bake at 350 F for 40–45 minutes. Cool 5 minutes, then remove to cooling rack.

Makes 1 loaf (8 servings)
