Gingersnap Applesauce Cookies

  • 1½ cups granulated sugar
  • 2 Tablespoons margarine, softened
  • ½ cup applesauce
  • ¼ cup molasses
  • 2½ cups soy-flour blend
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon baking soda
  • ½ teaspoon salt

In medium bowl, combine sugar and margarine until blended. Stir in applesauce and molasses. Add soy-flour blend, ginger, allspice, baking soda and salt; stir until well blended. Drop dough by rounded tablespoon about 1 inch apart onto greased or nonstick baking sheet. Flatten with measuring cup coated with granulated sugar. Bake 12–15 minutes until lightly brown. Cool two minutes before removing to cooling rack.

Makes about 30 cookies
