Apple Cider Pork Chops

  • ¼ cup soy-flour blend
  • ¼ cup bread crumbs
  • 4 pork chops (½ inch thick)
  • 1 tablespoon vegetable oil
  • ½ cup apple cider
  • 1 apple sliced
  • 1 onion sliced
  • 2 tablespoons margarine

Combine soy-flour blend and bread crumbs in resealable plastic bag. Add pork chops, and shake lightly to coat meat. In a large skillet, brown pork chops in oil over medium heat for 3–4 minutes. Place pork chops in baking pan, and add apple cider. Cover with foil, and bake at 325 F for 30–45 minutes or until tender. In skillet used for browning pork chops, sauté sliced apples and onions in margarine until tender. Place pork chops on platter with apple mixture. Serves 4
